The materials used inside Jill’s include rich walnut floors and maple trellises, brick tile, and large glass windows that look out on to Walnut Street, offering guests a lofty yet intimate and welcoming atmosphere. The centerpiece of the space is its sophisticated exhibition station made of backlit honey onyx, which exudes a warm glow and allows guests to observe Chef Rogers and his culinary team in action. The main dining area includes unique touches such as the display of Venetian-style color-glass vases by Robin Mix, photography by Maggie Taylor, and pictures of fruits and vegetables over the brick pizza oven by Anne Barrett. Guests can be seated in the main dining room with a view of the chefs at work, or in the adjacent bistro bar, a slightly more casual gathering space. In warmer weather, the windows open to allow fresh air in, and visitors have the option of dining outdoors on the expansive terrace while enjoying the view of the Flatiron Mountains. Live music is an integral part of a visit to the hotel, and five nights a week guests can enjoy everything from jazz to samba in the lobby or outdoors before or after enjoying a meal at Jill’s. |

Jill’s Restaurant at The St Julien Hotel & Spa is committed to enhancing the environment and personal health by making a conscious effort to provide organic produce and humanely farmed livestock whenever possible, as well as composting food items and recycling cooking oil for use as biodiesel fuel. A high tea is also held at Jill’s on Saturdays 12-3 p.m., featuring Tea Forte, scones, finger sandwiches, and more. |

The wine list at Jill’s emphasizes both well-known and eclectic wines from around the globe. A wide selection of Old and New World wines are available by the bottle, half-carafe, and glass. The diverse global choices include an Allan Scott Pinot Noir from New Zealand and the Masi Masianico Pinot Grigio from Italy. A selection of cordials and aperitifs is also available. |

Jill’s Restaurant and the adjacent T-Zero Bar feature a variety of unique drink specialties, including signature cocktails like the “Bruce Goose,” made with vanilla vodka, freshly pressed pineapple juice a drop of Chambord; the “Canyon Mint,” featuring Bacardi Limon, lightly sweetened with fresh lime, mint, and simple syrup; the “Forbidden Fruit,” with Scharbay Grapefruit Vodka, a dash of simple syrup and fresh squeezed lemon; and the “Van Gogh,” made with Von Gogh Espresso Vodka, a dash of cream, and a shot of espresso, served chilled. |
